Pot Pies:
I found some individual, ceramic dishes at the dollar store and used them to make pot pies. These treats would work great as a main dish and certainly fulfill the need for indulgence on Thanksgiving. I made them with chana dal (delicious) but you could use tempeh, chickpeas or seitan.

This is a sweet and tangy cranberry sauce made with an orange and Marsala wine. Cranberry sauce is easy to make, can be made ahead of time and tastes so much better than the canned jelly stuff.

Here's another stuffing, made with winter squash, pumpkin and zucchini. Nothing beats stuffing dabbed with a little gravy invading from your mashed potatoes.

Seitan Cutlets in a Rhubarb & Pomegranate Sauce:
This is a nice treat. The sauce, with rhubarb and pomegranate juice is only a little tart, but is savory and delicious. I served this over my chicken flavored cutlets, dusted with flour and pan fried.
